Before we can say goodbye to summer, fall has begun waving its leafy leaves at us, making us think of pumpkin pie, sweaters, and hot chocolate. However, we are ready.

1. Thai Pumpkin Soup
Quick recipe: Soften the pumpkin in the oven for 45 minutes to 1 hour. When golden, add canned coconut milk, unsalted butter, and a teaspoon of red Thai curry powder. Mix and salt to taste.
2. Shredded Brussels sprouts & Apples
Quick recipe: Dice a crisp apple and dip in lemon juice. Stir-fry two handfuls of diced tofu cheese. Add minced garlic and maple syrup. Remove the tofu from the pan and add the chopped Brussels sprouts until cooked through but not soft. Mix with apples and tofu, add pine nuts.
3. Crispy Broccoli
Quick recipe: Bring to a boil the brine as you would for pasta, then cook the broccoli for less than a minute and drain. Mix minced garlic with almond butter, olive oil, and lemon juice. Dice two apples, mix everything and serve quickly.
4. Pumpkin Muffins and Feta
Quick recipe: Golden and soften the pumpkin in the oven. If it’s soft, dice it first to help it brown faster. Mix tender pumpkin with cooked spinach, sunflower seeds, Parmesan, diced feta cheese, and a little mustard. Beat eggs and milk separately, then add pumpkin mixture. Add flour and mix carefully. Bake in cupcake tins.
5. Spiced Pumpkin Pie
Quick recipe: Bake a medium-sized pumpkin in the oven. When soft, add half a cup (one cup full if you have a sweet tooth) brown sugar, then mix in the cinnamon, cloves, and freshly ground nutmeg. Add a teaspoon of ginger. Take a store-bought pie crust, spread a thin layer of chestnut filling, then pour the pumpkin mixture on top. Bake until crust is golden or begins to brown around the edge.

Quick recipe: Mix dried turmeric powder with raw honey, some lemon and a pinch of pepper in a cup of hot but not boiling water, and that’s it! You’ve got yourself a delicious fall drink (and it keeps you warm, too)!
